For the Picky Eater


James is such a picky eater!! He wont even eat my smoothies most of the time.  So on my quest to stay healthy I'm always looking for good recipes.  James has always been little for his size being a preemie baby so I've always worried about bulking him up! He makes me want to stock my pantry with processed food(which he loves, fruit snacks, boxed anything, chips, etc...) just so he will eat and get bigger!! But I can't give in!!

Anyway I've talked about my friend Liza's Blog, Greener Eating, before but I'm including a link to her Apple Bars. (and I stole her picture!) They were sooooo EASY and FAST to make and very good! You do need a Food Processor so go and buy one if you haven't because you will need it for a lot of things, but Blenders work relatively well too.

After they cooled and I cut them, James at 3 pieces!!! Little did he know that I put Prunes, Walnuts, Shredded Wheat and Flax in them.  Robert even thought the prunes and apples tasted like cranberries or cherries.  Anyway, they have a Chocolate Cherry version on the blog and a Chocolate Walnut I'm going to make both today. They were easy to cut and store in a container in the fridge.

Best of all they were made with all simple WHOLE ingredients straight from the earth!

I going to post more recipes to come of some fun things we have tried in the last few months!

( I modified my recipe with what I had: instead of egg replacer powder I used Flax Seed ground up, and instead of Dates I used Prunes.  On the Chocolate Bars I'm going to substitute Raisins for the Dates too. Watch your oven because mine only took 15 minutes instead of 20.)

i am definitely going to try these...i'm curious about their recipes labelled vegan because a lot of them contain honey...which isn't vegan...any ideas?

Ive thought about the honey not being vegan too--Im not going to go all vegan though- using dairy products and fish/chicken etc...

What about agave nectar? it has a different flavor and isn't quite as sticky--there is also Steiva-- I think I spelled that right- it is a little expensive and comes granually but you could add water and make it sticky?? you just need something to hold it all together. combined with the flax or egg replacer some of the above might work. I made the chocolate cherry and it it sooo good. I also just made their cashew cheese ball it was good and a little rich. and Im going to use some of their cashew cheese for the walnut meat lettuce wrap- tonight- Im so excited.

Liza also uses prunes and water or dates and water- to make a thick paste- as a sugar substitute -and it is good but potent so you only need a little bit.
